Passport to Italy: Extra Virgin Olive Oils

Demystify the differences between types of extra virgin olive oils, and then use that knowledge to create delicious dishes. Recipes will include: fresh basil pesto genovese; fett’unta, the original bruschetta; pasta con broccolini; and torta d’olio e pistacchio (olive oil cake with pistacchio).

Wilderness environments create special situations not usually encountered in an urban or suburban environment. This interactive class will give you the skills, knowledge, and abilities to best care for an ill or injured person until you can reach qualified care. You’ll become better prepared to respond when faced with limited resources, longer times to care for someone, and decisions about when and how fast to evacuate an ill or injured person.

The first step in becoming a confident home chef is choosing the best knife for the job! Chef Les Eckert will guide you in honing important knife skills. Work with carrots, celery, cauliflower, red peppers, tomatoes, garlic, herbs, lemon, and avocado using the methods of julienne, dice, concasse, zest, juice, roast, blanch, mince, and chiffonade. Following knife work, you will prepare and eat a meal as a class.
